We are a beachfront, 25 en suite bedroomed, 3* Inn, situated at Rottingdean, East Sussex. The hotel was refurbished two years ago. It is mainly leisure led with some corporate custom. It does not have a function room. Trading is good all year rising dramatically during holiday periods and in good weather. We currently have a 5* EHO rating which we expect to continue.

Our current Kitchen Manager is moving right away from the area but the remaining team members are staying. We offer a fully branded menu which changes twice per year, supported by several " occasion menus" which run at the relevant periods.

As well as our hotel residents we also have a local following for both food and drink, along with the beach goers in good weather and the walkers in all weather.

There are opportunities to continue to grow our food offer especially during the off season by ensuring continuity of standards along with the correct usage of specials menus.



Key Responsibilities.


Manage the opening and closing of the kitchen
Prepare, cook and present food to company specification
Keep kitchen clean, tidy and hygienic at all times
Work safely around kitchen equipment and monitor and deal with any maintenance issues
Ensure stock counts are accurate and completed on time
Maintain accurate food ordering and stocking levels, including kitchen materials to meet customer expectation
Manage all kitchen – related office administration and third-party contractors
Assist in delivering financial targets set for the house
Manage wastage through correct portion control and records
Train and develop staff to assist in kitchen duties
Keep up to date with new products, menus and promotions
Adhere to company policies and procedures and licensing laws
Be involved and contribute at all team meetings
Carry out instructions as given by management and head office
